Where charcoal fire meets the casino floor

Billy Tea Kitchen is Brisbane's heritage dining room with a gaming heart — dry-aged steaks from the charcoal grill, Queensland seafood shucked to order, and a candlelit lounge where dinner rolls into blackjack, roulette and late-night pours.

The house in numbers

One address, two appetites

A quarter-century of service, a grill that never cools and a gaming floor that hums past midnight — measured, honestly.

"We built Billy Tea for the long night — the last bite of wagyu and the last hand of cards should feel like the same celebration."

The plated collection

Our kitchen releases dishes the way ateliers release seasons — studied, restrained, built to be remembered. This season's centrepiece is the 45-day dry-aged ribeye with burnt butter jus.

Centrepiece

45-Day Dry-Aged Ribeye

Grass-fed Queensland beef, aged in-house, finished over ironbark charcoal with bone-marrow jus and smoked salt from the Sunshine Coast hinterland.

Kitchen philosophy

Fire is our first language.
Seasonality is our grammar.
Hospitality is the whole sentence.

Source within the state

Ninety percent of our produce travels less than 400 kilometres — beef from the Darling Downs, bugs from the Sunshine Coast.

Cook over live fire

No gas on the line. Ironbark and ironbark only — the same fuel since 1998.

Play fair, pour generous

The gaming lounge runs on the same hospitality code as the dining room: transparent odds, honest pours, no pressure.

"I came for a steak and stayed for the roulette wheel. Brisbane has nothing else like this room — the ribeye alone is worth the trip across town."

Good to know

Questions, answered plainly

The things guests ask us most, from dress codes to chip cash-outs. Everything else lives on the full FAQ page.

No membership required. Walk-ins are welcome at the bar and terrace; we recommend booking the dining room on weekends. The gaming lounge asks for photo ID proving you're 18 or over — that's the only ticket.

Smart casual after 6pm — a collared shirt and closed shoes for the gaming floor. The terrace is relaxed all day; swimwear stays at the hotel pool.

Yes — the Casino Royale package seats your dinner party first, then walks you to a reserved table on the floor with a dedicated dealer. Mention it in your booking notes or call +61 7 3221 4455.

Every course on the tasting menu has a pescatarian and gluten-free twin, and the kitchen handles most allergies with 24 hours' notice. Tell us when you book and the pass adjusts.
