The long version

How a tea room became Brisbane's dining room with a dealer's licence

In 1998, William Fairfield parked a battered urn of billy tea on a Queen Street counter and started pouring for Brisbane's night shift. The twelve stools filled. The menu grew a charcoal grill. In 2011 the state granted a gaming licence, and the room next door became a twenty-table lounge where regulars settle arguments over roulette instead of the bill.

Today the kitchen turns over ninety-six dishes a season and the floor pays out more than a hundred jackpots a month — but the ritual is unchanged. Bread baked at four, seafood iced at dawn from Moreton Bay, chips cashed at the cage before the last cab leaves. We have never advertised a discount we didn't honour, and we have never seated a guest we wouldn't feed again.

The name is a promise to the founders' fathers, who boiled billy tea over campfires west of Roma before either of them could afford a stove. Everything we serve — the 45-day ribeye, the high tea, the midnight blackjack burger — is a variation on that first pot: simple things, taken seriously, shared loudly.

The house is owned and operated by Billy Tea Kitchen Pty Ltd (ACN 094 726 381), a family company led by founder William A. Fairfield and co-owner Elena Fairfield. There are no franchises — every seat is run by the same team.

The gaming lounge is open to all adults 18+ with photo ID. Diners get priority seating after 8pm, and your restaurant table number doubles as your player card registration.

Gladly. We run kitchen and floor walk-throughs every weekday at 3pm. Request one through the contacts page and the maître d' will confirm within a day.

Absolutely. Dealers walk new players through every game at minimum stakes, and printed rule cards sit at every table. We practise responsible service — set a budget before you sit and the floor team will help you keep it.
